Eastern USA Riding December 26 to January 6th?

Anyone out there have time off and going riding in the Eastern USA December 26th 2018 to January 6th 2019?

Can anyone recommend some great spots they've ridin before in the Eastern USA. Nothing to narly, but a great adventure all the same.
